Hello friends! We were craving some delicious chocolate peanut butter concoction…I was tempted to make the chocolate peanut butter pie but instead wanted to try something I’ve been dreaming of for a while. This recipe is inspired by my chocolate peanut butter pie one, but instead becomes a creamy, smooth, and filling vegan chocolate peanut butter pudding! I hope you love it–I’m off to whip up another batch!
- 1 block extra firm tofu
- 1/2 c peanut butter
- 3 Tb cocoa powder
- Either 1/3 c maple syrup OR 5 Tb coconut sugar
- 2 ts vanilla
- 1/2 c water
- Put all ingredients in a blender (I use a Vitamix) and blend on high until smooth!
